A rosé wine born from vines with an average age of 58 years.
The black Grolleau and the Gamay macerate to be squeezed 12 hours after, what gives a nice colour. Cabernets have been harvested 10 days before and have macerated during between 12 and 18 hours. This wine is turned into wine in vats with fermentation temperature control at 16°C to protect the fruit. The maturation continues in cement vats until bottling.
